Malabar Biryani Recipe:-
1 kg Chicken with bone,
1 kg Basmati Rice(soak for 30 mins),
Malabar Biryani making process:-
100 ml Ghee,
100 ml Oil,
350 g Onion (chopped) (150g for Brista + 200 g for to saute)
Ginger(50g) + Garlic(100g) + 7 Green Chilles
(Grind these three well into paste),
Marinade Chicken,
1 hand full Mint leaves(chopped),
1 hand full Coriander leaves (chopped),
100 g Tomatoes(Sliced),
1 tsp Garam masala,
200 ml Curd,
Salt to Taste,
300 ml water,
Cover and Cook for 15 mins on medium Flame,
Keep some Biryani gravy in a separate bowl,
Chicken Masala Marinade:-
1 tbsp Pepper powder,
1/2 tsp Turmeric powder,
1/2 lemon juice,
1 tsp Salt,
Mix well and soak for 30 mins,
Rice Boil Process:-
2.5 L Water,
4 Cloves,
1 inch Cinnamon,
4 Cardamon,
2 tsp Salt,
Soaked Rice,
Boil the rice until it is 85% cooked,
Layering
Ingredients:
2-3 tbsp Biryani Gravy,
Fresh hand full Coriander leaves
Fresh Mint a small hand full (Chopped)
Brista (Fried onion),
2-3 tbsp Ghee (Melted),
70 g Cashew nuts (Roasted),
35 g Raisins (Roasted),
1/4 tsp Rose Water,
Dum on medium heat for 30 minutes
Now Ready to Serve Perfect Traditional Malabar Biryani....
