This easy mashed potato recipe for roasted garlic mashed potatoes is a go-to side dish in our house all year round! It’s so good that you can use this for a Thanksgiving side dish and any other holiday dinner.

INGREDIENTS
1-2 lbs Yukon gold potatoes
Chicken stock and/or water for boiling

1-2 whole heads of garlic
Olive oil

Melted Butter
Milk or Half & Half
Salt & pepper
Fresh Thyme

Bacon, cut into small pieces and cooked until crispy
Finely chopped chives

DIRECTIONS

0:36 Cut the top off a head of garlic, cutting into the individual cloves of garlic. Place on top of a sheet of heavy duty aluminum foil and drizzle with olive oil. Fold the foil to seal the garlic inside and roast in a 400F oven for about 60 min or until the cloves are golden and soft.

0:49 Wash, peel and cut potatoes into similarly sized large cubes. I like to leave a little skin on the potatoes when peeling but if you don’t like any skin in your mashed potatoes, go ahead and peel them completely.
1:19 Place cut potatoes in a large stock pot and cover with chicken stock, water or a combo of chicken stock and water. Boiling in chicken stock gives the mashed potatoes and even deeper savory flavor. Totally not necessary but is great additional step to this classic side dish. Bring to a rolling boil and cook for 10-15 min or until the potatoes are soft enough for a knife to easily pass through with no resistance.

1:47 While potatoes are boiling, warm up your milk or half and half and a few springs of thyme to the milk to infuse with the fresh herb flavor. Try not to boil the milk but just warm enough that it’s giving off a little steam.

2:06 After fully cooked, strain the potatoes and put into a large mixing bowl. Squeeze in the roasted garlic and mash it into the potatoes

2:25 Add in the butter and slowly incorporate the milk or half and half slowly, until you reached your desired consistency. Mashed potatoes should be able to stand up and have peaks and not mush into a puddle.

2:43 Season with salt and pepper to taste.

2:50 Add fresh chopped chives and give it a final mix. Try not to over mix or over mash. This will make the potatoes gummy.

3:05 Top with crispy bacon bits, more chopped chives and a pat of butter.
