🗒️ INGREDIENTS
4 eggs
2 tbsp Milk
¼ tsp salt
¼ tsp Ground Pepper
2 tbsp olive oil
¼ Yellow Onion medium size, chopped small
2 oz cream cheese room temperature
¾ cup Sweet potato roasted
¼ cup bacon bits
½ cup Mexican blend cheese
1 packages Empanada dough
1 egg for brushing empanadas

📝 INSTRUCTIONS
🥚 Prep Ingredients
1️⃣ Measure ingredients and preheat oven to 375°F.
2️⃣ Whisk eggs, milk, salt, and pepper in a large bowl.

🍳 Cook Filling
3️⃣ Sauté onions in olive oil in a skillet until translucent.
4️⃣ Add egg mixture to skillet and gently scramble.
5️⃣ Off heat, mix in room temp cream cheese until well blended.

🥟 Assemble Empanadas
