Today we'll show you how to make a Chipotle-Butter Injected Rotisserie Chicken on the grill. I'll season the chicken with Oakridge BBQ Game Bird and Chicken seasoning.

Start by injecting your chicken with the Stubb’s Chipotle-Butter injection. Stubb’s also offers a “non Chipotle” butter injection. Inject about every 1 to 2 inches at an angle.

Ingredients:
• 1, 3lb chicken
• Bottle of Stubb’s Chipotle-Butter Injection, available here: http://armadillopepper.com/Stubbs-Chi.... You will need about 1/3 to ½ of the bottle.
• Oakridge BBQ Chicken seasoning, available here: http://armadillopepper.com/Oakridge-B.... You will need just a few tablespoons.
Next, take some of the Chipotle Butter or some oil to use as a binder for your chicken seasoning. Now, season with your favorite chicken seasoning. I’m using Oakridge Game Bird and Chicken seasoning.

Stuff chicken with a few slices of onion, lemon and fresh oregano. Tie up the legs using kitchen twine, so that they are not flopping around on the rotisserie. You will knock off some of the seasoning while tying up the legs. You can touch-up the seasoning when you first put the chicken on the grill.

Set the grill to approximately 400 degrees F. I added maple wood chips for smoke flavor. Mount the chicken on the rotisserie spit and place on the grill. Now, is a good time to touch-up the seasoning.

Close the lid and cook until the chicken reaches an internal temperature of 165 degrees F in the thickest part of the chicken.

When the chicken use protection on your hands and arms when removing the chicken. The rotisserie spit and mount will be extremely hot and can burn you.

Remove the string that was used to tie up the chicken and you are ready to serve!
