This recipe is using lamb shoulder but you can also use beef (cat 2) or chicken thighs.
To avoid frying the potatoes, you can parboil them instead and add them directly in the curry sauce.
For a wholesome variation, you can use sweet potatoes instead and even make this dish vegan by adding chickpeas and some more cashews instead of the meat ! Success guaranteed!
