泰國肉碎飯

材料:
免治豬肉一斤
青豆角4兩
乾蔥頭一個
辣椒仔一隻
雞蛋一隻
檸檬半個
蒜蓉一湯匙
泰國魚露
白米適量

處理:
1. 青豆角,清水洗乾淨,切兩端,切細粒,放碗內。
2. 乾蔥頭,去皮,切碎,放碗內。
3. 辣椒仔,去籽,切碎,放乾蔥頭內。
4. 大火在鑊內煲滾清水一升,加入油一茶匙,及鹽半茶匙,加入青豆粒,灼30秒,除去草青味,撈起,清水浸。
5. 開始煮飯。

烹調:
1. 大火在鑊內燒熱油一湯匙。
2. 煎好荷包蛋,放碟上。
3. 免治豬肉,放鑊內,轉中慢火,繼續煎,加入油半湯匙,煎透,鑊中心加入蒜蓉、乾蔥頭及辣椒碎。
4. 加入調味料:
a. 魚露一湯匙
b. 老抽半湯匙
c. 生抽半湯匙
轉大火,炒勻,加入糖2茶匙,炒勻。
5. 加入青豆粒,炒勻。
6. 裝好白飯,放碟上。
7. 揸出適量檸檬汁在青豆粒及肉碎內,攪勻。
8. 肉碎,放白飯旁。
9. 其餘肉碎,放碟上,灑上辣椒碎。
10. 荷包蛋,放白飯上。
11. 辣椒碎,放肉碎上。
12. 剩下的肉碎,放碟上。
13. 完成,可享用。

Minced pork meat rice in Thai style

Ingredients:
Minced pork meat 1 catty
Green string bean 4 taels
Shallot 1 No.
Chili 1 No.
Egg 1 No.
Lemon half No.
Garlic sauce 1 tbsp
Thai fish sauce
Plain rice appropriate amount

Preparation:
1. Green string bean, rinse with tap water. Cut both ends. Dice in small cubes. Put in a bowl.
2. Shallot, get it peeled. Chop well. Put in a bowl.
3. Chili, remove seeds. Chop well. Put in the shallot.
4. Heat up 1L of water at high flame in wok. Add in 1 tsp of oil, and 0.5 tsp of salt. Put the beans in the wok. Boil for 30 seconds, to remove unpleasant smells. Pick it up. Soak in tap water.
5. Start cooking rice.

Steps:
1. Heat up 1 tbsp of oil at high flame in wok.
2. Fry egg in sunny-side-up style. Put on a plate.
3. Minced pork meat, put in the wok. Turn to medium-low flame, continue frying. Add in 0.5 tbsp of oil, fry well. Garlic sauce, shallot, and chili are to be put at the centre of the pork.
4. Add seasoning:
a. Fish sauce 1 tbsp
b. Dark soya sauce 0.5 tbsp
c. Light soya sauce 0.5 tbsp
Turn to high flame. Fry well. Add in 2 tsp of sugar, fry well.
5. Add in the green string bean, fry well.
6. Put the rice on a plate.
7. Squeeze appropriate amount of lemon juice in the beans and minced meat. Mix well.
8. The pork meat, put next to the rice.
9. The rest of the minced meat, put on a plate. Put chili cubes on top.
10. The egg, put on top of the rice.
11. Chili chips, put on top of the minced pork.
12. The rest of the minced pork, put on a plate.
13. Complete. Serve.
