Hifiridzi/Highfields Dish Recipe

Ingredients:
1kg Brisket Beef
700g Leafy Greens Vegetables
300g Chopped Tomatoes
1 small/medium onion
2 cloves garlic
Salt/Pepper
2 tbsp cooking oil
1tsp medium curry powder

Step-by-step instructions per video;

The dish is famously known as Hifiridzi or Highfields because it originated from the Highfields area of Harare in Zimbabwe.

The main ingredients are simple (being beef and leafy greens) but the recipe techniques make a delicious dish that is usually enjoyed with classic plain sadza.

Ideally, the leafy green vegetables need to be fresh. Here, I harvested some from my garden and I sliced the vegetables thinly. I’m using 1kg of flat brisket joint beef, but you can use any cut of beef you choose.

First, I start by frying the beef, or "kukanga nyama" as we say in Shona (add salt and pepper at this stage). The frying process is a very important step if you want the best outcome for your recipe. You want to take your time frying the beef until it’s nice and golden brown.

Add chopped onions and continue frying until the onions soften. Then, add 1 tsp of medium curry powder, and chopped tomatoes. Now, cover the pot and allow the beef to stew until tender.

Now, add the leafy greens, mix, and cover pot for about 3-5 minutes. You want to maintain the color of your greens, so make sure not to overcook them. Now, our dish is ready to serve.’
