Medu Vada is a popular South Indian breakfast or snack made from urad dal (black gram). It's crispy on the outside and soft on the inside. Here's a basic recipe:

Ingredients:

1 cup urad dal (soaked for 3-4 hours)
1 small onion, finely chopped
2 green chilies, finely chopped
1 inch ginger, grated
A handful of coriander leaves, chopped
1/2 tsp cumin seeds
A pinch of asafoetida (hing)
Salt to taste
Oil for deep frying
Instructions:

Grind the batter: Drain the soaked urad dal and grind it into a smooth batter using a wet grinder or a mixer. The batter should be thick and fluffy.
Add flavorings: Add chopped onion, green chilies, ginger, coriander leaves, cumin seeds, asafoetida, and salt to the batter. Mix well.
Shape the vadas: Wet your hands and take a small portion of the batter. Shape it into a ball and gently flatten it in the palm of your hand. Make a hole in the center using your thumb.
Fry the vadas: Heat oil in a deep pan. Carefully slide the vadas into the hot oil. Fry until golden brown on both sides. Drain on paper towels.
Tips:

For a crispier vada, add a little rice flour to the batter.
Soaking the urad dal for longer will result in a fluffier batter.
Be careful while frying the vadas as the oil can splatter.
Serve medu vada hot with coconut chutney and sambar.
