VEGAN CHOCOLATE BROWNIES
Makes 24 Brownies

INGREDIENTS

For the Brownies:

240 grams all-purpose flour
3 grams baking powder
5 grams fine sea salt
240 grams boiling water
90 grams finely chopped unsweetened chocolate (100% cocoa)
60 grams unsweetened alkalized cocoa powder (Dutch-processed)
3 grams instant coffee or espresso powder
500 grams organic or caster sugar
120 grams vegetable oil
15 grams pure vanilla extract
90 grams semi-sweet chocolate chips
90 grams lightly toasted and coarsely chopped walnuts

For the Topping:

90 grams semi-sweet chocolate chips
90 grams lightly toasted and coarsely chopped walnuts

PROCEDURE
