The Hagrid: A Bourbon and Mezcal Cocktail
1.5 oz Bourbon
1.5oz Mezcal
.25 oz Lime Juice
.5 oz Pineapple Juice
.5 oz Cinnamon Simple Syrup (recipe below)
Dropper Saline
Garnish Rosemary Sprig

Cinnamon Simple Syrup: A Cinnamon Syrup Cocktail
1/3 Cup Water
1/3 Cup Granulated Cane Sugar
3 Tbsp Ground Cinnamon
Combine everything in a small saucepan and stir until combined. Place on medium-low heat and stir until sugar dissolves. Stop stirring and simmer until it barely breaks a boil. Immediately remove from the heat and allow to cool to room temperature. Pour into a syrup bottle and store in a cool, dark place.

Norbert Mocktail: A Spicy Tea Mocktail
3 oz Chilled Laphroaig Tea
.25 oz Lime Juice
.75 oz Pineapple Juice
.5 oz Cinnamon Simple Syrup
Dropper Saline
Jalapeno Slices
Garnish Rosemary Sprig
Smoke out a rocks glass by slapping a Rosemary spring and torching it until it begins to smoke. Turn the rocks glass over the smoking rosemary and set aside. In a mixing glass, combine the remaining ingredients and slices of jalapeno to taste. Muddle slightly, add mixing ice and stir for 2 minutes. Double strain into the prepared glass with a sphere. Rub the Rosemary to knock off torched bits and tuck into glass.

Professor Snape: A Cognac and Amaro Cocktail
1.5 oz Cognac
1.5 oz Sfumato Amaro
.25 oz St George's Coffee Liqueur
.75 oz Pomegranate Juice
2 droppers Saline
Garnish Square Dark Chocolate
