I don't know the exact recipe and proportions for the Banshee from Latitude 29 in New Orleans. There are no recipes online and very little information other than what we can glean from the menu. We do know the ingredients because they're on the menu and since it uses a fresh banana, we can assume it's blended with a traditional blender. So today, we'll make a version of this and see how it goes.

Sometimes coconut milk can separate or "curdle." It tastes the same and in a blended drink it works fine... you can't tell any difference in texture. Also, since this is being served in an opaque coconut mug the overall look doesn't matter. BUT, if you want to combat that and make something more visually appealing I'd suggest using cream of coconut. As for the separated or curdled coconut milk, you won't know that until you open the can.
