Jollof spaghetti with grilled turkey
Ingredients for the grilled turkey:
Sesame oil
Curry
Knorr cube
Paprika
Cameroon pepper
Garlic powder
Onion powder

Instructions:
Preheat your oven to 200–250°C.
In a bowl, add your turkey (ensure it’s at room temperature, not cold).
Season generously with the listed spices and a drizzle of sesame oil. Mix thoroughly to
coat the turkey evenly.
Line a baking tray with parchment paper, then arrange the seasoned turkey pieces on it in
a single layer.
Grill in the preheated oven until golden brown and fully cooked through.

Ingredients for the jollof spaghetti:
Spaghetti
Meat or chicken stock
Curry
Thyme
Bay leaves
Tomorrow paste
Pepper mix
Seasoning
Garlic
Onion
Vegetable oil

Instructions:
In a pan, heat some vegetable oil.
Add thyme and bay leaves, let them fry gently to release their flavor.
Add in sliced onions and minced garlic. Sauté until fragrant.
Stir in curry powder and seasoning. Let it toast slightly for depth of flavor.
Add tomato paste and fry until it darkens in color and loses its raw taste.
Pour in the pepper mix and continue to fry on medium heat until the oil begins to float to
the top. Set the sauce aside.

Cook the Spaghetti:
In a separate pot, bring your meat or chicken stock to a boil.
Add thyme and bay leaves, let them fry gently to release their flavor.
● Add in sliced onions and minced garlic. Sauté until fragrant.
● Stir in curry powder and seasoning. Let it toast slightly for depth of flavor.
● Add tomato paste and fry until it darkens in color and loses its raw taste.
● Pour in the pepper mix and continue to fry on medium heat until the oil begins to float to
the top. Set the sauce aside.
Cook the Spaghetti:
● In a separate pot, bring your meat or chicken stock to a boil.
● Add a little salt and drop in your spaghetti. Cook until al dente (firm to the bite).
● Once cooked, transfer the spaghetti directly into the prepared tomato and pepper sauce.
● Mix thoroughly and allow it to simmer on low heat to absorb flavor.
● Take it off the heat and serve hot with your grilled turkey or any protein of choice.
