Protein Shake:
Ice cubes
1/2 cup - 1 cup unsweetened almond milk
2 tbsp ground flax seed
1 scoop unflavored gainful protein powder
2 tbsp unsweetened cocoa powder
1/4 cup cashews
1 tbsp pumpkin seeds
6-12 drops liquid stevia (you can use frozen berries for sweetness if you prefer)

Add banana, avocado, spinach, kale, peanut butter, whatever you want! The key is to get protein, fat, and veg into your smoothie.

Chicken Pad Thai:
1-2 lbs chicken cut into cubes (using kitchen scissors makes this so much easier!)
Season the chicken with salt, garlic powder, cumin, cayenne, and ginger

Chop carrots, onions, green beans, and broccoli (you can use any veg here that tickles your fancy)

Bring water to a boil and cook pad Thai noodles for 4 minutes, then run under cold water. You want the noodles to be slightly crunchy.

Peanut Sauce: 1/2 cup soy sauce
1 tbsp pure maple syrup
2 tsp minced garlic
2 tbsp miso paste
1-2 tbsp sriracha (to desired spice level)
1/4 cup peanut butter (we want the ingredients to say “peanuts, salt”

Fry chicken in 1-2 tbsp olive oil. When cooked, remove chicken from pan, add a dash more olive oil, and add veg. Add 4 tbsp water and cover pan to lightly steam veg. Add chicken back into pan (I had to move to a larger pot to stir). Add cooked pad Thai noodles and peanut sauce. Stir and enjoy!
