Let's celebrate the occasion of India's 76th Independence Day with the most delicious Vegetable Dum Biryani. This was the dish that represented India the best according to most people in Park Street, one of the busiest streets of Kolkata, also known as the hub of Kolkata nightlife.

Ingredients:
2 tbsp Ghee
2 dried red chillies
1 small stick of cinnamon
1 bay leaf
2 peppercorns
2 cloves
2 cardamom
2 tbsp Ginger+ Garlic + Green Chilli Paste
1tsp garam masala
1tsp chilli powder
1/2tsp turmeric powder
1/2tsp coriander powder
Salt
Black salt
1 large Onion; thinly sliced
1 large Tomato, sliced
1/2 cup carrots; chopped
1/2 cup Cauliflower; chopped & fried
1/2 cup Beans; chopped & fried
1/2 cup bell peppers; sliced
1/2 cup Broccoli; chopped
1/2 cup Mushroom; chopped
1/2 cup potatoes; chopped & fried
1 cup Basmati Rice
1&1/4 cup Water
A handful of chopped mint leaves

Kesar Milk:
1 cup milk
10-15 Kesar strands
A pinch of yellow food colour

1 tsp rosewater
2 tbsp ghee
1 tsp salt

In the Stahl pressure cooker, add the ghee. Let it heat & add in the bay leaf, dried red chillies, cinnamon, clove, cardamom & peppercorns. Add in the sliced onions & green chillies & cook till the onions are translucent. Add in the ginger garlic chilli paste, vegetables & spices & mix well. Next, add the fried vegetables (potatoes, cauliflower & beans). Mix well, add in a little water & cover & cook till the vegetables soften.
To make the Kesar milk, heat milk in a saucepan. Add in the Kesar & yellow food colour & bring to a simmer.
Add the Kesar milk, ghee, rosewater & salt to the cooked basmati rice & mix well till all the rice strands are coated.

Layering
Remove the cooked vegetables from the Stahl pressure cooker. Layer the rice in it, followed by some chopped mint leaves & the vegetables. Keep repeating the layers. Close the lid of the pressure cooker.
Place a Tawa on heat & put the pressure cooker on top of it & cook the biryani on low heat for 15-20 minutes.
Garnish with fried onions. Serve hot with some raita & dig in.
