So, here's our LAST video of the 2021 season! I actually shot this video back in September and have really been itching to get it online because THIS rack of lamb ribs is simply amazing! It's a simple 3 to 3.5 hour cook at 250°F with the last hour wrapped in foil and then another 20 or 30 minutes out of the foil to finish them up... these things were CRAZY DELICIOUS!

I made my own seasoning blend for this rack of ribs. I did not use salt in the rub because I salted the meat for a short dry brine in the fridge before going to the grill. If you want to make a salted version of this seasoning blend, add about one tablespoon of kosher or sea salt to the mix. Here's the recipe for the rub:

1T granulated garlic
1T dried oregano
1 tsp ground cinnamon
1 tsp ground allspice
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp ground aleppo pepper (sub pinch of cayenne with 1/2 tsp paprika)
1/2 tsp ground nutmeg

You will wanna keep this recipe for any lamb you might wanna cook in the future!
