Spanish Beef Stew

1 lb. beef stew meat
1c onion, chopped
2 garlic cloves, grated
2c red potatoes, chopped
1 (14.5oz) can diced tomatoes
12 oz sofrito
1/2c green olives, pitted and halved
salt and pepper

Heat oil in cazuela. Brown stew meat over medium heat. Season with salt and pepper. Once browned, add meat to olla saving the drippings in cazuela. Add onions and garlic to cazuela and saute about 5 minutes. Add diced tomatoes, potatoes, sofrito, olives and onions to olla. Cover and cook on low for 4 hrs or until beef and potatoes are tender.
