Ingredients:

2 cups dried shiitake mushrooms (about 20 pieces)
1/2 lb green leafy vegetable (I used bok choy in this video)
1 tbsp shopped fresh ginger
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp shaoxing wine
mushroom water (from soaking)
water (enough to cover mushrooms for braising)

Mushroom marinate:
1 tsp sugar
1/4 tsp salt
1/2 tbsp chopped ginger
1/2 tbsp oil

Cornstarch slurry mix:
1 tbsp cornstarch
1.5 tbsp water
1/2 tbsp soy sauce for seafood (or oyster sauce)

材料:

2 杯 乾冬菇 (大概20隻)
1/2 磅 白菜仔 (或喜歡的綠葉菜)
1 湯匙 薑末
2 湯匙 蠔油
1 湯匙 生抽
1 湯匙 紹興酒
冬菇水 (浸泡冬菇的水)
清水 (足夠份量蓋過冬菇用來炆煮)

醃冬菇:
1 茶匙 糖
1/4 茶匙 鹽
1/2 湯匙 薑末
1/2 湯匙 油

粟粉水:
1 湯匙 粟粉 (玉米)
1.5 湯匙 水
1/2 湯匙 蒸魚豉油 (或蠔油)
