HOMEMADE CHILI GARLIC SHRIMP PASTE
INGREDIENTS
250 grams shrimp paste
1 cup vegetable oil
50 grams chopped red chili
50 grams chopped garlic
1/4 cup vinegar
50 grams sugar
1 tsp anato powder

INSTRUCTIONS

1. Chop chili and garlic or put in a food processor and process until finely chopped.
2. In a small bottom pan heat, ½ cup of oil on medium heat and add the chili and garlic. Increase heat to medium high and cook for 8-9 minutes; stirring often to ensure it does not burn. Once you can see all of the water has evaporated and the mixture has gone from a runny pink sauce to a thick red chili paste, pour the anato powder, mix and it is ready.
3. Add in additional oil, mix, turn off heat and let cool.
4. Once cool, pour and store in clean jar. Refrigerate if not using within a few days.
