Wajik / Steamed Glutinous Rice With Palm Sugar

Ingredients:
1 kg glutinous rice
Water
1/8 tsp kapur (lime stone paste)
1 tbsp vegetable / cooking oil

Step 1
Steamed Glutinous Rice:
Soak glutinous rice in water with 1/8 tsp kapur and 1 tbsp oil for 3 hours
Rinse and drain glutinous rice
Steam glutinous rice for 30 mins
Fluff up the rice and sprinkle water (100ml) over the rice
Steam for another 20 mins

Step 2
Making Sugar Syrup
10 gula melaka (500g)
300g sugar
300g dark brown sugar
500 ml water
4 pandan leaves
Salt to taste

Heat the sugar, water, pandan leaves, salt for 5 mins until the sugar dissolves and strain

Step 3
Coconut Mixture:
600 ml coconut cream
100 ml water
4 pandan leaves
Salt to taste

Heat coconut cream, water, pandan leaves, salt for 2 mins and set aside

Step 4
Making caramel: 1 cup sugar
Heat sugar until melted on med - low heat until golden brown

Ingredients:
4 pandan leaves
3 tbsp air kapur
1/2 tbsp vegetable / cooking oil

Step 5
Pour coconut mixture to the caramel and stir
Add in sugar syrup, pandan leaves and stir constantly
Add air kapur, oil and and stir until thicken
Add steamed glutinous rice and mix well
Stir constantly until sticky and lumpy
Pour wajik into a baking dish and let it cool completely

Wajik
Bahan-bahan:
1 kg beras pulut
Air
1/8 sudu teh kapur
1 sudu besar minyak masak

Langkah 1
Kukus Beras pulut
Rendam beras pulut, 1/8 sdt kapur dan 1 sdm minyak selama 3 jam
Kukus beras pulut selama 30 minit
Masukkan sedikit air (100ml) di atas pulut dan kacau rata
Kukus pulut selama 20 minit

Langkah 2
Syrup Gula Melaka
10 keping gula melaka (500g)
300g gula pasir
300g gula perang
500 ml air
4 daun pandan
Garam secukup rasa

Masak air gula sehingga larut dan tapis

Langkah 3
Santan Kelapa
600 ml Santan Kelapa
100 ml air
4 daun pandan
Garam secukup rasa

Panaskan santan kelapa selama 2 minit

Langkah 4
Karamel: 1 cawan gula
Panaskan gula sehingga cair dan keperangan

Bahan-bahan:
4 daun pandan
3 sudu besar air kapur
1 sudu minyak masak

Langkah 5
Tuang santan ke dalam karamel dan kacau hingga sebati
Masukkan air gula melaka , daun pandan dan masak hingga pekat
Masukkan air kapur, minyak masak dan kacau
Masukkan pulut kukus dan masak hingga likat
Tuangkan kedalam bekas dan dibiarkan sejuk sepenuhnya
