Another first cook for me... the guys at iDevour have started selling more Argentinian style cuts, and I had to give this one a go!

The larger Vacio is made up of bavette, skirt and flank. The Pulpon de Vacio is its smaller cousin, and is made up of bavette and part of the skirt.

The Somerset is one of my favourite fire cooking tools but has been seriously underused since we moved house, so it was great to get it cleaned up and get a fire lit - I plan to use this grill a lot more as we move into Autumn and the temperatures get a little cooler.

Cooked over our kiln-dried British ash logs and beech splits, always precision cut and perfectly dried, so you can use them straight out of the box, for a consistent burn with no splitting required.
