Hello friends! Welcome to the Kathiawadi taste of my kitchen. I am Bhavnaben Rathod, and today we are going to make a delicious red chili sour and sweet pickle that will make you forget the taste of round mango pickle! This quick recipe takes only 15 minutes to prepare.

🥒 Ingredients List:
250 g of fresh red chilies 🌶️
2 tablespoons of coriander powder
1 tablespoon of fenugreek powder
1 tablespoon of fennel seeds
1/4 teaspoon of turmeric powder
1 teaspoon of salt
200 g of sugar (or jaggery) 🍬
1 teaspoon of Kashmiri red chili powder
1/2 teaspoon of asafoetida (hing)
1 cup of oil for frying
Lemon juice (to taste)

🥘 Detailed Method:
1. *Preparation of Chilies*: Choose fresh, sharp red chilies. Wash and cut them into medium-sized pieces, removing seeds and fibers. Wear gloves or apply oil to your hands to avoid burning.

2. *Mixing Spices*: In a bowl, mix the chopped chilies with turmeric and salt. Let it rest for *10-15 minutes*.

3. *Preparing Spice Mix*: In a grinder, combine coriander powder, fenugreek powder, fennel seeds, and grind them into a coarse powder.

4. *Cooking the Pickle*:
Heat oil in a pan and add asafoetida.
Add the ground spices and sauté until fragrant.
Add the rested chilies and mix well.
Gradually add sugar and stir until it melts and combines with the chilies.
Add turmeric, salt, and Kashmiri red chili powder for color.
Check the syrup consistency; it should form a string when tested between fingers.
Turn off the heat and add lemon juice to avoid bitterness.

5. *Cooling and Storing*: Allow the pickle to cool completely before transferring it to a clean, dry bottle. Use a clean spoon to serve.
