🦀🔥 Koliwada Crab Biryani with Spicy Coconut Crab
A bold coastal biryani packed with spice, crunch, and coastal soul. Perfect for a weekend feast!
Here’s a step-by-step recipe ⬇️
🦀 Step 1: Prep the Crab
• 🧼 Clean and prep 3–4 crabs
• Hard-shelled: Remove top shell and clean
• Soft-shelled: Use whole after washing mud off
🌿 Step 2: Marinate the Crabs
🧴 In a bowl, mix:
• 2 tbsp ginger garlic paste
• 2 tbsp green paste (coriander + mint + green chilli)
• 1 tsp Kashmiri red chilli powder
• 1/2 tsp turmeric
• Salt to taste 🧂
• Juice of 1 lemon 🍋
• 1 tsp spicy red chilli powder 🌶️
👉 Coat the cleaned crabs well in the marinade and let it sit for 20–30 mins.
🍤 Step 3: Koliwada Batter & Fry
🧪 In another bowl, make the batter:
• 1 cup besan (gram flour)
• 1/2 cup rice flour
• 2 tbsp cornflour
• 1 tsp ajwain (carom seeds)
• 1 tsp red chilli powder
• 1/2 tsp turmeric
• Salt
• 1 tbsp ginger garlic paste
• 2 tbsp green paste (same as above)
• Water to make a thick coating batter
👩🍳 Mix well till smooth and lump-free.
🔥 Heat oil and deep-fry the marinated crabs until golden & crispy.
🍛 Step 4: Biryani Masala Base
🍲 In a heavy-bottom pan, heat:
• 2 tbsp ghee
• 1 tbsp birista oil (or regular oil)
Add:
• Whole spices: 2 elaichi, 5 black peppercorns, 3 cloves, 1 bay leaf, 1/2 tsp cumin
• 2 tbsp ginger garlic paste
• 2 tbsp green paste
• 1 cup birista (fried onions)
• 1/2 cup chopped tomatoes 🍅
• Handful of chopped coriander + mint 🌿
• 1 tsp red chilli powder
• 1 tsp biryani masala
• 1/2 tsp coriander powder
• 1/2 tsp cumin powder
• 1/2 tsp turmeric
• Salt to taste
• 1 tsp garam masala
• 1 tsp jaggery powder or a pinch of sugar
Let this cook down until rich and thick.
🥥 Add 1/2–3/4 cup coconut milk or coconut cream to balance spice & bring coastal richness.
🍚 Step 5: Prep the Rice
• Boil basmati rice (2 cups) with whole spices (bay leaf, elaichi, cloves, peppercorns), salt, and 1 tsp oil
• Cook till 80% done. Drain and set aside.
🍽️ Step 6: Layer & Dum Cook
In a biryani pot:
1. Spread a layer of masala
2. Place some fried crabs
3. Add rice
4. Repeat layers, ending with rice
Top with:
• Mint & coriander
• Saffron milk (or warm coconut milk infused with saffron) 🥥🌼
• Some more birista
🔥 Cover and cook on dum for 15 mins (low flame or with dough-sealed lid)
🌫️ Finish with charcoal smoke for extra depth
