RAJGIRE KA PARANTHA
Ingredients
1½ cups amaranth (rajgira) flour
Rock salt (sendha namak) to taste
½ tsp roasted cumin powder
2 tbsps chopped fresh coriander leaves
2 tsps ginger-green chilli paste
2 medium potatoes, boiled and peeled
1 tbsp ghee + for greasing and cooking
Method
1. Take amaranth flour in a bowl. Add rock salt, roasted cumin powder, coriander leaves and ginger- green chilli paste.
2. Mash the potatoes and add to the bowl. Add ghee, ½ cup warm water and knead to soft dough.
3. Grease the worktop with some ghee, take a portion of the dough and roll into thick disk.
4. Heat a nonstick tawa. Place the prepared parantha and cook on medium heat for 3-4 minutes.
5. Flip, apply some ghee and cook for 3-4 minutes more.
6. Serve hot.
SINGHADE KA HALWA
Ingredients
¾ cup water chestnut (singhada) flour
½ cup ghee
¾ cup sugar
¾ cup hot milk
½ tsp green cardamom powder
3 tbsps chopped cashew nuts + to sprinkle
3 tbsps chopped pistachios + to sprinkle
3 tbsps chopped almonds + to sprinkle
Method
1. Heat ghee in a nonstick pan. Add water chestnut flour and sauté on medium heat for 10-12 minutes or till the mixture turns brown.
2. Add sugar, 1½ cups hot water and mix well so as to avoid any lumps. Cook for 4-5 minutes.
3. Add milk and mix well. Cook for 2-3 minutes.
4. Add green cardamom powder and mix well.
5. Add cashew nuts, pistachios and almonds and mix well.
6. Transfer in a serving bowl, sprinkle cashew nuts, pistachios and almonds and serve immediately.
VRAT WALE ALOO
Ingredients
4 medium potatoes (aloo), boiled and peeled
2 tbsps ghee
1 tsp cumin seeds
2- 3 green chillies, chopped
Rock salt (sendha namak) to taste
¾ cup yogurt
2-3 tbsps scraped fresh coconut
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Method
1. Heat ghee in a non-stick kadai; add cumin seeds and once they start to change the colour, add green chillies and sauté for a few seconds.
2. Mash the potatoes roughly and add to the kadai.
3. Add rock salt and yogurt and mix well. Cook for 4-5 minutes.
4. Add coconut, 1 cup water and mix well. Cook for 2-3 minutes.
5. Add coriander leaves and mix well.
6. Transfer in a bowl, garnish with coriander sprig and serve hot.
