This light and refreshing Apple Walnut Blue Cheese Salad is wonderful! Easy to make ahead, especially for guests who always love this salad. The flavor combination of tart-sweet apples, crunchy walnuts, and pungent blue cheese is unforgettable!

INGREDIENTS
Apple Walnut Blue Cheese Salad:
100 g salad greens (spring mix)
1 middle apple
3/4 cup dried cranberries
3/4 cup walnuts halves
50 g blue cheese
10 g unsalted butter
1 tablespoon powdered sugar

Healthy Salad Dressing:
½ cup dried cranberries
1 teaspoon grated orange peel
¼ cup apple vinegar
2 tablespoons honey
4 tablespoons Extra Virgin Olive oil
Salt and black pepper, to taste

PREPARATION
1. Mix the olive oil, dried cranberries, orange peel, apple vinegar, honey, salt and pepper in a blender.
2. Place butter into your pan. Add walnuts and powdered sugar. Cook 3-5 minutes.
3. Add the greens, cranberries, walnuts, blue cheese and apple into a large salad bowl.
4. Pour a little of the salad dressing over the top of the salad and toss to combine. Enjoy!
