There are so many ways to transform last night's leftover mashed potatoes into something new and delicious These simple mashed potato patties are one way to use leftovers and create a new side dish (or main course!).

2 1/2 - 3 cups mashed potatoes
1 egg
1/2 cup sauteed onions or finely sliced scallions
2 TBSP flour (add a little more if potatoes are too loose)
a dash or two cayenne pepper
salt and pepper to taste
2 TBSP butter for skillet
2 TBSP olive oil for skillet

Allow the mashed potatoes to come to room temperature. Add egg and stir into potatoes, combining thoroughly. Add in onions or scallions, flour and seasoning. Stir to combine well. If the mixture is too loose, you may want to add a little bit of flour. It should be able to hold shape.

Over medium high heat, put butter and olive oil in large skillet. Once the butter is melted and starting to bubble, it's ready. You can make these patties whatever size you desire. I generally make them the size of an average hamburger. Using a spoon, drop a lump of the potato mixture into skillet, and then gently flatten with a spatula. They should be about 3/8" to 1/2" thick.

Saute patties for 4-5 minutes, or just until they develop a nice brown crust on the bottom. Flip them over and repeat. Remove from skillet and enjoy. Serve with sour cream or applesauce. Garnish with fresh chives, if desired.
