Keto Gingerbread Cookies

Ingredients:
✓ 2 cups almond flour
✓ 1/4 cup coconut flour
✓ 1/2 cup sweetener (like erythritol or stevia)
✓ 1 teaspoon baking powder
✓ 1/2 teaspoon baking soda
✓ 1/4 teaspoon salt
✓ 1 teaspoon ground ginger
✓ 1 teaspoon ground cinnamon
✓ 1/4 teaspoon ground cloves
✓ 1/4 teaspoon ground nutmeg
✓ 1/4 cup melted coconut oil
✓ 1/4 cup unsweetened almond milk
✓ 1 large egg
✓ 1 teaspoon vanilla extract

Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. In a large bowl, mix the almond flour, coconut flour, sweetener, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. In another bowl, whisk together the melted coconut oil, almond milk, egg, and vanilla extract. Combine the wet and dry ingredients, stirring until well mixed. Roll the dough into small balls and place them on the prepared baking sheet. Flatten each ball slightly with your hand. Bake for 10-12 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
