• vanilla buttercream divided (Our buttercream video:    • How to Frost a Cake with Homemade But...  )
• prepared green cupcakes
• prepared white/vanilla cupcakes
• piping bags
• round tips
• red Americolor gel paste
• mini chocolate chips
• round circle cutter
• push pops (I get mine from Golda's Kitchen in Canada you can also get them on Amazon.com here: http://amzn.to/1anCD8a)

To make the watermelon buttercream, divide vanilla buttercream in half, and place the white buttercream in a piping bag. Put aside for later. With the other half of the buttercream, combine a small amount of red gel paste and mini chocolate chips to create a "watermelon" look. Place into piping bag and set aside.

To assemble the watermelon push pops, peel the wrappers from the cupcakes, cut the cupcakes into thirds. Using the circle cutter, cut the cupcake slices to size and discard excess. Starting with the green cupcakes, push 2 slices into the push pop and press down firmly. Using the white buttercream, pipe a small amount of buttercream on top of the green cupcakes. Next, insert the white cupcakes into the push pop and press down. Using the watermelon coloured buttercream, fill the push pop to the top and add a few mini chocolate chips to top it off! Place the lid on the top of the push pop and it's ready to be served.
