客家糭

Ingredients (makes 20)
2lbs glutinous rice (uncooked/ washed/soaked for at least 4 hours)
Add a bit of salt to the rice.
60 pcs bamboo leaves
Roll of cotton strings.

Filling - Hakka Jung (makes 20)
1lbs roasted peanuts (salted)
1 large bowl Shallots
1 small bowl (1/2 lbs) dried shrimps (soaked and washed)

Filing - 5-spice Pork (make 20)
10 salted egg yolks (cut in halves)
20 pieces of pork (rubbed in 1tsp of 5 spices powder, 1 tsp salt)
40 small pieces of dried scallops (washed and soaked)
2 large bowls of peeled green beans (washed and soaked)

Steps
Hakka dumpling filling
1. Peel shallots and put in blender to grind
2. Put the presoaked and washed dried shrimps into blender to grind
3. Put peanuts into blender and grind
4. In a wok add oil. Put in shallots and fry until fragrant and most moisture removed
5. Add shrimps. And continue to stir fry. Again try to remove the moisture.
6. Add the ground peanuts and dd about 1 tsp of salt.
7. Stir and fry until fragrant.
8. Remove from heat and set aside to cool.
9. When cool, use hands to make sushi size fillings.
