My Elderberry Cake or Muffin Recipe
Greased 8x8 Pan or 6 Muffin Pan Pre-Heat 325 Degree Oven Bake 15-18 Minutes

Cake Ingredients 1/2 C. Strained Berries
1 C. Sour Cream
2 Beaten Eggs
3Tbsp. Melted Butter Streusel Topping Ingredients
1Tsp. Vanilla With Fork Mix In Small Bowl
1/2 Tsp. Salt 1/2 C. Melted Butter
Mix Above ingredients together. 1/2 C. Brown Sugar
Add in 1/2 C. Flour
2 C. Flour 1/2 Tsp. Cinnamon
2 Tsp. Baking Powder
1/2 Tsp. Cinnamon
1/4 Tsp. Ginger
Stir only until JUST Blended, Do Not Over Mix.
Drop Batter into greased pan and spread.
Spread Strained Berries on top of Batter OR Cook 1/2 C. Fresh Berries in small pot with 1/3-1/2 C. Water, 2 Tsp. Sugar Cook on Simmer Stirring for 20-30 Min. until mixture reduced. Take off stove to COOL before Spreading on top of Batter.
With fingers crumble Streusel Topping over Berries(on Batter). Place in Preheated Oven. Test with toothpick in 15 -18 minutes. Turn oven off for LAST 15 minutes of baking and remove when toothpick comes out CLEAN.
Great hot with ice cream or a Cup of Coffee or Tea. It's EVEN better the next day as it becomes more moist.
