30 g fresh coconut water
50 g canola oil
3 egg yolks

70 g. sugar
1/4 tsp. cream of tartar (can sub with 1/2 tsp. lemon juice or white vinegar)

coconut filling
150g fresh coconut meat
150g fresh coconut water
250g coconut milk
30g cornstarch
50g sugar
1/4 tsp salt
30g salted butter

frosting:
pastry pride premier
