Ingredients:
2 cups pumpkin chunks
3-4 carrots, chunks
1/2 bunch swiss chard
1 apple, cut in half
1 stem fresh dates
1-2 leeks, white part only
Green beans- 1 handful


Dressing:
3 tbsp olive oil
1 tsp Cinnamon
1 tsp cumin
1 tsp salt
1/2 tsp pepper
1 tbsp silan or honey
2 cups water


Instructions:
Cut, clean, and prepare all the ingredients into big chunks.
Arrange veggies by sections in an oven safe havy pot.
Prepare the marinate without the water, and brush on top.
Add the water, cover, cook for 45 minutes on medium heat, transfer to the oven to continue roasting until golden brown.
Serve room temperature.
