Is it possible to make vegan ham from food waste? Making wash the flour seitan leaves you with an abundance of starch, and this week's video was an experiment into turning that spawn [of seitan] into a delicious vegan deli meat.

It was a very theoretical recipe, and I'm absolutely thrilled with how well it worked. A few tweaks are needed to turn it into the prosciutto that I'd hoped for, but I'm definitely on to something and I'll continue to play around with the ingredients. I'm so pleased that a by-product of vegan meat-making can be turned into something fantastic. It has a really nice chew for your back teeth, and the flavours can be so easily customised. It also works out fairly cheap to produce, which make it a winner in my book!

Starch Prosciutto Ingredients:
500g (2 cups) Spawn (wheat starch & water)
1 tbl Tomato Puree
1 tbl Brown Miso
¼ tsp Salt
2 tsp Beetroot Powder
1½ tsp Nooch
1 tbl Bacon Flavouring
2 tbl Vital Wheat Gluten
4 tbl Soy Protein
Juice of ½ Lemon

These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
