Vegan Haitian Spaghetti and Sausages Recipe**

*Ingredients:*
8 oz spaghetti
1 tbsp oil
1 tsp Himalayan salt
1 tbsp vegan butter
1/2 red bell pepper, sliced
1/2 green bell pepper, sliced
1/2 onion, sliced
1 tbsp ketchup
1 tbsp tomato paste
2 cloves garlic, minced
1 tsp onion powder
1 tsp garlic powder
1/2 tsp black pepper
1/2 tsp paprika
2-3 vegan sausages, sliced
1 tbsp hot sauce (optional)
2 tbsp apice (green seasoning)
1 sprig of thyme
1 scotch bonnet pepper (optional)

*Instructions:*

1. *Boil the Pasta:*
In a large pot, bring water to a rolling boil.
Add the oil and Himalayan salt to the boiling water.
Once the water is boiling hot, add the spaghetti.
Cook for 8-10 minutes or until the pasta is al dente. Be sure not to overcook.
Drain the pasta, then mix in the vegan butter while it's still hot. Cover and set aside.

2. *Sauté the Vegetables and Sausages:*
In a large skillet or pot, heat a little oil over medium heat.
Add the red and green peppers, and onions, and sauté until they begin to soften.
Stir in the ketchup and tomato paste.
Add the minced garlic, onion powder, garlic powder, black pepper, and paprika. Sauté for another 2-3 minutes.

3. *Cook the Vegan Sausages:*
Add the sliced vegan sausages to the sautéed vegetables.
If using, add hot sauce and continue to sauté until the sausages are nicely browned.

4. *Add the Apice:*
Stir in the apice (green seasoning) and mix well.
Continue to sauté the mixture, ensuring all the flavors combine.

5. *Combine Pasta and Sauce:*
Add the cooked pasta to the pot with the sautéed veggies and sausages.
Mix everything together until the pasta is well coated with the sauce.

6. *Finish and Serve:*
Add the thyme sprig and, if using, the scotch bonnet pepper.
Cover the pot and let it sit for a few minutes to allow the flavors to meld.
Remove the scotch bonnet pepper before serving if you don’t want too much heat.

7. *Enjoy:*
