How to Use Wild American Persimmons

If you have located a wild American persimmon tree on your property, you are in for a treat. Our favorite treat is persimmon bread, made "kind of" like zucchini bread, but in my opinion it's better!

Recipe:

1 cup persimmon pulp
1/2 cup softened butter
1/4 cup white sugar
1/4 cup brown sugar
1/2 cup sorghum syrup (can be substituted with additional 1/2 cup sugar)
2 eggs, room temp
2 1/4 cup self rising flour
cinnamon to taste

Preheat oven to 350. Cream together sugars and butter. Add eggs and sorghum syrup, combine. Add cinnamon. Slowly add in flour about 1/2 cup at a time. After all flour is combined, fold in persimmon pulp. Add mixture to a greased loaf pan, cook at 350 for 45 min- 1 hr or until toothpick comes out clean.
