Lots of people I follow are participating in a brisket collab using the hashtag #1kbrisket. I'm not on the list of participants, but cooking a brisket sounded all right by me. So if you don't mind I'll use the hashtag also. And if you do mind, I'll remove it.

I had this 8.5lbs wagyu brisket that was calling my name, sourced locally and the cow was raised and slaughtered in my zip code. I think that's pretty cool... and it came out amazing!

Cental Texas style here, only SPG and used the mustard and pickle juice slather using post oak primarily with some mesquite secondarily. My first time cooking with mesquite.

Wrapped it in a foil boat, which was also a first for me.

A little bit of fire, steel, beer and patience and we have ourselves one helluva brisket y'all.
