Do remember that 15 days will count after the germination and not right after planting seeds. Some of these might take 5-6 days more, depending on the weather and growing conditions.
Fenugreek

Once the seeds germinate, fenugreek leaves can be harvested after 12-14 days. Simply trim off the fresh mature leaves, and the rest will regrow again in a week or two.
Sauté the leaves lightly, add them to salads, and try this in sandwiches; you can use this leafy green as a healthy spinach alternative.
Arugula

Arugula is popular as a rocket because of how fast it grows. The seedling will develop in 7-14 days after planting the seeds. The early you harvest, the more sweet and tender the leaves will taste.
Fresh leaves have a peppery taste, and they go really well with lettuce and spinach.
Green Onions

This versatile green has countless uses in cuisines. You can harvest the fresh tops leaving at least an inch of shoots back and they will come back again and again. You can even grow this on your windowsill!
Spinach

Depending on the variety and growing condition, spinach plants are ready to harvest in just 2 weeks after the seed germination. Harvest once the plant grows at least 5-6 healthy leaves that are about 3-4 inches in length.
Pea Shoots

Pea Shoots need very little space and can be harvested in just 13-15 days. All you need is a sunny windowsill, and you are good to grow these.
You can enjoy these fresh in your salad. They also make for a great lettuce alternative.
Garden Cress

Garden cress will be ready to harvest in just 10 days. If you want the best growth, use a rich and well-draining growing medium and make sure it gets 4-5 hours of direct sunlight.
Its fresh leaves add a mouth-watering peppery flavor to sandwiches. It makes for a great alternative to spinach and tastes delicious in salads and after sautéing.
Microgreens

Microgreens seeds germinate in 2-3 days. Once they do, provide the seedlings with plenty of sunlight and warmth while watering them well. Start harvesting when they are 3-4 inches tall, and they will keep on growing!
Lettuce

Lettuce seeds germinate quickly. After that, the plant will be ready to harvest in the next 2 weeks, once the leaves grow up to 4-6 inches in length.
