Ingredients
For Noodles Basket
1 Tsp – Oil
1 Cup – Noodles boiled
Oil for frying
For Manchurian balls
¼ cup – Cabbage chopped
¼ cup – Capsicum chopped
¼ cup – Carrot chopped
¼ cup – French beans
1 Tbsp – Ginger chopped
1 Tbsp – Garlic chopped
1 Tbsp – Green chilli Chopped
¼ Cup - Refined flour
2 Tbsp – Corn starch
1 Tsp – Black pepper powder
1 Tbsp – Onion chopped
Salt to taste
Water as required
Oil for frying
For Fried Noodles
½ cup – Noodles boiled
1 Tbsp – Refined flour
1 Tbsp – Corn starch
For the Manchurian Sauce
1 Tbsp – Oil
1 Tbsp – Garlic chopped
1 Tbsp – Ginger chopped
1 Tbsp – Green chilli chopped
¼ Cup – Onion chopped
2 Tbsp – Red chilli sauce
1 Tsp – Green chilli sauce
1 ½ Tbsp – Soya sauce
1 Tbsp – Tomato ketchup
½ Tsp – Black pepper powder
1 Tsp – Chaat masala
Salt to taste
For Fried Noodles sprinkle
½ Tsp – Pizza seasoning
½ Tsp – Red chilli powder
¼ Tsp – Chaat masala
For Noodles Basket
1. Take two steel bowls, grease the outer side of bowl with oil.
2. Wrap a small portion of boiled noodles tightly over the greased bowl.
3. Place a kadai on medium flame and heat oil for frying.
4. Place the noodle-wrapped bowl over a mesh ladle strainer.
5. Carefully pour hot oil over the noodles using a ladle until they hold shape and begin to crisp.
6. Remove and gently separate the noodle basket from the bowl. Set aside to drain.
For Manchurian balls
1. In a mixing bowl, add chopped cabbage, chopped capsicum, chopped carrot, chopped french beans, chopped ginger, chopped garlic, chopped green chilli, refined flour, corn starch, black pepper powder, chopped onion, and salt mix well.
2. Add some water to form a thick, slightly sticky mixture. The mixture should hold shape when pressed.
3. Place a kadai on medium flame and heat oil for frying.
4. Drop small portions of the Manchurian ball into the hot oil.
5. Fry them halfway on medium flame. Remove and drain on a paper towel.
6. Re-fry the half-fried Manchurian ball until they turn golden brown and crispy. Remove and drain on a paper towel.
For Fried Noodles
1. In a mixing bowl, toss boiled noodles with refined flour and corn starch.
2. In same frying oil, deep fry the toss noodles until golden and crisp.
3. Drain on paper towels.
For the Manchurian Sauce
1. Place a kadai on medium flame and heat oil.
2. Add chopped garlic, chopped ginger, chopped green chilli and chopped onion sauté for 2 minutes.
3. Now add red chilli sauce, green chilli sauce, soya sauce, tomato ketchup, black pepper powder, chaat masala and salt mix well.
4. Add fried Manchurian balls and toss to coat evenly.
5. Turn off the flame and keep aside.
6. In fried noodles bowl sprinkle some pizza seasoning, red chilli powder and chaat masala toss well.
Assembling the Chaat
1. Place a coriander sprig on a serving plate and set the noodle basket on it.
2. Fill with seasoned fried noodles and saucy Manchurian balls.
3. Garnish with more seasoned noodles and fresh coriander.
