Ingredients:

2 cups fresh grated Coconut
1 tsp Cardamom Powder
1/2 cup Sugar
250 gms Maida
1/4 cup Ghee
Salt as per taste
Water
Oil for Frying


Directions:

1. In a pan, heat about a tablespoon of ghee. Add the grated coconut and sugar to it and roast it for about 2-3 minutes on a medium flame.
2. Switch off the flame and add the cardamom powder to it and mix well. Keep the mixture aside to cool.
3. Meanwhile, take maida in a large mixing bowl. Add salt and the remaining ghee to it and mix it really well until you get a crumbly texture.
4. Add water gradually and knead it into a medium soft dough. Give the dough a rest of about 15-20 mins.
5. Now make small balls out of the dough. Take one and start rolling it out to the size of a puri. Use dry flour to help you with the rolling.
6. Apply water to half the circle and add about a heaped spoon of the filling mixture towards one side. Fold over into a semi-circle and seal the edges properly. Trim the edges with the help of a cutter. Work the same way with the remaining dough and filling mixture.
7. Heat enough oil in a kadhai. On a medium-low flame, slide the karanji or gujiya in the hot oil and fry till very light golden brown on both the sides. It should only take about a minute to fry on both the sides.
8. Drain excess oil and remove on an absorbent paper. Serve the fresh coconut karanji the same day you make them.
