10 large unwaxed, organic lemons
4 1/4 cups (1 litre) good quality vodka or everclear
3 cups (600 grams) granulated sugar
4 cups (950 ml) water, distilled if possible

This recipe makes 9 cups (2 litres) of limoncello.
