In this video, I show you how to cook eggplant curry on the Instant Pot. I took this recipe from instantpot.com, their website. The first step is to saute an onion and garlic. Then add a can of diced tomatoes and seasoning consisting of salt, 1 teaspoon of curry powder, cummin, and tumeric, and one tablespoon of coriander. Saute and mix for two minutes. Then add one large eggplant cut into cubes, and pressure cook for 3 minutes.
