From Zi Char To Michelin Stars: How This Chef Reimagined Singaporean Cuisine | On The Red Dot

Описание к видео From Zi Char To Michelin Stars: How This Chef Reimagined Singaporean Cuisine | On The Red Dot

Host Rozz Lee meets 42-year-old Jimmy Lim, the first Singaporean chef to earn three Michelin stars.

Trained in his father's “zichar” stall in Singapore, Jimmy landed a job in a tapas bar in Taipei by serendipity. It paved the way for another chance meeting with an award-winning female chef who was a widely regarded pioneer of fine dining in Taichung. In her restaurant, Jimmy was given the opportunity to hone his culinary skills.

After an eight-year stint, he founded JL Studio in 2017 in Taichung City, Taiwan, after some investors offered him a space to develop a restaurant concept of his choice. He planned a European menu, but three weeks before the opening, Jimmy changed his mind.
