How are you all? Hope all is well with you guys and your loved ones.

In this video, I will be sharing my Authentic Ilocano Igado (Dinaldalem) Recipe. My Father is from Cagayan Valley, and since I was a kid, he taught me how to cook different kinds of delicious ulams. I moved to Manila and was living dependently for three years, that was when I was able to cook on my own and it became my hobby. This is my best way version of cooking this very famous recipe of Cagayanos and Ilokanos.

Short Fact: Igado came from the Spanish word "Higado" which also means Liver. For Ilocanos, Dinaldalem came from Ilocano root word Dalem which also means, Liver. Igado and Adobo are cooked almost in the same manner. Mangan tayon kakabsat! Tara na sa masayang pagluluto!!!

Ingredients
Cooking Oil
Garlic and Onion
Pork Meat (Laman or Kasim part)
Black or White Pepper
Paprika (Optional)
Laurel Leaves
Soy Sauce & White Vinegar
Pork Cubes or Broth
Potatoes and Carrots
Pork Loin (Lomo)
Pork Liver (Atay)
Sugar
Chili
Bell Pepper
Green Peas
