Opah & King Crab Oscar!

FEATURED SEAFOOD: Moonfish (Opah)
FEATURED CHEF: Ray Loquiao.

The classic "Oscar" recipe is applied to this pan seared fish favorite. King Crab meat, Bearnaise Sauce, and Asparagus contribute to this dish.

Chef begins by pan searing his fresh fillet of Opah. He plates this dish starting with his Roasted Yukon Gold Potato and Roasted Garlic mashed potato combo as a "bed" for the fish.

With the fish presented over the potato Chef Ray places Asparagus, Carrot, and King Crab on top of the seared Opah. Everything is then dressed with Bearnaise Sauce!
