Hey everyone! Today, we’re diving into the ultimate comfort food – Mutton Biryani! Let’s walk through the ingredients and step-by-step process to make this flavorful dish right in your kitchen.

Ingredients
For Boiling the Mutton:
Mutton: 1 kg
Salt: As needed
Ginger-Garlic Paste: 1 tbsp
Mint and Coriander Leaves: A handful each
Slit Green Chilies: 2
Water: ½ glass

For Soaking Basmati Rice:
Basmati Rice: 4 cups (washed 3 times and soaked for 30 minutes)

For the Biryani Masala:
Oil
Bay Leaf: 3
Cloves: 6
Cardamom: 6
Cinnamon Stick: 3
Star Anise: 2
Slit Green Chilies: 6
Onions (sliced): 6
Salt: As needed
Ginger-Garlic Paste: 2 tbsp
Mint Leaves: A handful
Coriander Leaves: A handful
Red Chili Powder: ½ tbsp
Curd: 1 cup
Chopped Tomatoes: 6
Boiled Mutton (prepared earlier)
Lime Juice: ½ lime
Soaked Basmati Rice: 4 cups
Water: 5 glasses

Cooking Method:
1. Prepare the Rice
Wash the rice thoroughly and soak it for 30–40 minutes.

2. Start the Masala
Heat oil in a large vessel. Add whole spices (bay leaf, cloves, cardamom, cinnamon, and star anise) and green chilies.
Add sliced onions and a pinch of salt to help them cook faster. Cook until the onions turn golden brown (about 15 minutes).

3. Layer the Flavors
Add 2 tbsp of ginger-garlic paste and cook for 3–5 minutes on low heat.
Toss in mint and coriander leaves and sauté well.
Mix in ½ tbsp red chili powder, curd, and chopped tomatoes. Cook on low flame for 10 minutes.

4. Combine with Mutton
Add the boiled mutton to the masala and cook for 5–10 minutes on low flame.

5. Add Rice and Cook
Pour in 5 glasses of water and bring it to a boil. Check and adjust salt, then add lime juice.
Add the soaked rice, mix well, and set the vessel on dum (slow cooking).
Place a tawa under the biryani pot to prevent burning. Cook on high flame for 5 minutes, then simmer for 10 minutes.

Serve
Your delicious Mutton Biryani is ready! Serve hot with boiled eggs and cucumber-carrot raita.
