Recipe in English:

Ingredients:
-Doodh (Milk) 2 litres
-Hari elaichi (Green cardamom) 7-8
-Khoya 250g
-Sugar ¾ Cup or to taste
-Badam (Almonds) finely chopped 2 tbs
-Pista (Pistachios) finely chopped 2 tbs
-Kewra water ½ tsp
-Water 1 tsp
-Food color of your choice 3-4 drops
-Khopra (Desiccated coconut) ½ Cup

Directions:
-In a bowl,add milk,green cardamom & mix well,bring it to boil & cook on low flame for 18-20 minutes or until 25% milk is reduced & keep the milk on low flame.
-In a wok,add khoya,mix well & cook on low flame for 7-8 minutes.
-Add sugar,mix well & cook on low flame until light brown in color & sugar melts completely.
-Gradually add 1 cup of boiling milk in it & mix well then add remaining boiling milk & mix well.
-Add almonds,pistachios,mix well & cook for 1-2 minutes.
-Remove cardamom pods from milk & continue cooking on low flame until 25% milk is reduced & it becomes thick in consistency & light brown in color.
-Add kewra water & mix well.
-Let it cool at room temperature while stirring.
-Transfer the mixture to a jug & refrigerate until chilled (2 hours).
-Pour mixture in kulfi molds,cover with aluminum foil & insert ice cream sticks in it & freeze for 8 hours or overnight in freezer (makes 12).
-In a jar,add water,food color & mix well.
-Add desiccated coconut & mix well.
-Sprinkle colored desiccated coconut on kulfi & serve!

Ajza:
-Doodh (Milk) 2 litres

-Kewra water ½ tsp

-Khopra (Desiccated coconut) ½ Cup

Directions:
-Bowl mein doodh aur hari elaichi dal ker ache tarhan mix karein aur ubal anay ka bad halki ancch per 18-20 minutes or milk 25% reduced ho janay tak paka lein aur doodh ko halki ancch per rakh dein.
-Karahi mein khoya dal ker ache tarhan mix karein aur halki ancch per 7-8 minutes kliya paka lein.
-Cheeni dal ker ache tarhan mix karein aur halki ancch per light brown color ajanay aur cheeni melt ho janay tak paka lein.
-Thora thora ker ka 1 cup boiling milk dal ker ache tarhan mix karein aur phir remaining boiling milk dal ker ache tarhan mix ker lein.
-Badam aur pista dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Cardamom pods ko doodh mein sa nikal lein aur halki ancch per 25% milk reduced,consistency thick ho janay aur light brown color ajanay tak paka lein.
-Kewra water dal ker ache tarhan mix ker lein.
-Chamcha chalatay hoye room temperature per thanda ker lein.
-Mixture ko jug mein dal dein aur refrigerator mein thanda ker lein (2 hours).
-Mixture ko kulfi molds mein dal ker aluminum foil sa cover ker lein,ice cream sticks insert karein aur 8 hours or overnight kliya freezer mein freeze ker lein (makes 12).
-Jar mein pani aur food color dal ker ache tarhan mix ker lein.
-Khopra dal ker ache tarhan mix karein.
-Colored khopra ko kulfi per sprinkle ker ka serve karein!
