This is a delicious and novel way to prepare potatoes from Julia Child’s recipe. Fancy, yet simple to make dish. Dating back to the mid 1800’s in France this has been a winner ever since. I was impressed how easy it was although I had my doubts at the start.

3 LBS Russet Potatoes sliced 1/8 inch thick.
1 LB Unsalted Butter, Clarified
Salt and Pepper to taste

IMPORTANT : Bake for 20 minutes covered in foil. Remove foil, then continue baking for an additional 25 minutes. Then it is ready when nicely browned on top.
TIP: The excess butter tipped off from the baking dish can be saved and refrigerated. It will last safely up to 10 weeks in a refrigerator. You can freeze it indefinitely.
