Day 7 of the Meatico Dry Aging comparison and things are progressing nicely. We cut a steak and vacuum sealed for our final comparison. After cutting, we applied tallow to the exposed surface of the meat, making sure to cover the entire surface to create a protective barrier. The tallow acts as a seal, preventing excessive moisture loss while allowing the meat to age and develop deeper flavors.
