It’s food truck simulation day at culinary school, and we’re creating some delicious dishes! In this video, I’m prepping a Korean fried chicken sandwich, creating a jalapeño garlic aioli for fries, and assembling pulled pork sandwiches with all the fixings. Watch as we work on perfecting our techniques and putting everything together for our food truck service!

What’s on the Menu?
• Korean Fried Chicken Sandwich: I started by prepping a slaw for the sandwich, then tossed fried chicken in hot honey before assembling it with a brioche bun, slaw, and bread-and-butter pickles.
• Jalapeño Garlic Aioli: I charred jalapeños and shishito peppers, blended them with mayo and cilantro, creating a deliciously spicy aioli to serve with crispy fries.
• Pulled Pork Sandwich: We made a pulled pork sandwich topped with guac, pico de gallo, and all the essentials for a flavor-packed bite.
• Side Dishes: My classmates worked on Pozole, Hawaiian mac and steak plates, kimchi bowls with steak, and poke bowls to complete our food truck offerings.
