The Most Delicious Kefir Flatbreads with Potatoes and Cheese!

Ingredients For the Dough:
5 fl oz (150 ml) warm kefir (or substitute with liquid yogurt)
1/2 tsp baking soda
2 tsp sugar
1 tsp salt
1 fl oz (30 ml) olive oil
10 ounces (300 grams) all-purpose flour

For the Filling:
25 ounces (700 grams) potatoes, peeled and cubed
7 ounces (200 grams) suluguni cheese (or any other soft, salty cheese), grated
Small bunch of fresh parsley, finely chopped
1 tbsp butter
3 tbsp hot water
1/2 tsp salt

Prepare the Dough:
Pour warm kefir into a bowl.
Add baking soda and stir.
Mix in sugar, salt, and olive oil.
Gradually add all-purpose flour, stirring until kefir is absorbed.
Knead the dough for 3 to 4 minutes until soft and homogeneous.
Cover the dough and let it rest.

Prepare the Filling:
Boil potatoes until soft (about 15 minutes).
In a bowl, combine boiled potatoes, butter, hot water, and salt; mash into a puree.
Add chopped parsley and grated cheese; mix well.
Divide the filling into 4 portions.

Assembly and Cooking:
Divide the dough into 4 equal parts and roll them into balls.
Roll out each dough ball and place a portion of the filling in the middle.
Cover the filling with the dough, shaping it into a flatbread.
Repeat for the remaining dough and filling.
Pan-fry the flatbreads on a non-stick skillet over low heat for approximately 4 minutes on each side.
Cover with a lid to ensure even cooking.
Optionally, brush the flatbreads with butter towards the end of cooking.
