Note: For every recipe, we will use cooking oil, salt, and black pepper.

🥣 Butternut squash soup (makes 3-4 servings) 🥣
3 cups butter nut squash, cubed
1 large shallots
2 cups cherry tomatoes
1 1/2 cup diced carrots
4 garlic cloves, minced
1/4 - 1/3 cup mild Harissa sauce (plus more for the crispy beans)
1 can of cannelini beans, drained and rinsed (reserve about 1/4 cup to use as a crispy topping)
2 cups cashew milk or coconut milk (or more for thinner soup)
1 Bouillon cube
2 tbsps Nutritional yeast (optional)
3/4 - 1 cup water

Optional toppings:
Crispy harissa cannelini beans
Drizzle of oil
Fresh cilantro


🥕 Soy-free tofu stir-fry (makes 2-3 servings) 🥕
2-3 servings stir-fry vegetable blend
1 block super firm tofu, drained (if using fava bean tofu, it is already “super firm”)
3-4 tbsp cornstarch (or arrow root starch)
2 tsp ginger, grated
4-5 garlic cloves, minced
2/3 cup teriyaki or Stir-fry sauce

Optional toppings:
White and/or black sesame seeds

🥬 Creamy Kale & Onion Pasta (makes 4 servings) 🥬
4 servings of pasta (protein pasta recommended)
1 1/2 cups shredded dino/lacinato kale
1/2 yellow onion
4-5 garlic cloves, minced
2 cups unsweetened almond milk
1/3 cup cashew cream cheese
3-4 tablespoons nutritional yeast
Lemon zest to taste
1 cup reserved pasta water (saved from cooking pasta)
